2 lbs Yukon Gold potatoes

Instructions
1. Preheat oven to 425°F.
2. (Optional) Boil potatoes for 5–7 minutes, then drain.
3. Cut into wedges or chunks.
4. Toss with olive oil and seasonings.
5. Spread on a baking sheet with space between pieces.
6. Roast 40–45 minutes, flipping halfway.
7. Serve hot, garnish with extra herbs if desired.
