Ingredients
2 lbs yellow potatoes
2 tbsp olive oil
1 tsp sea salt
1/2 tsp garlic powder
1 tsp rosemary (optional)
Instructions
1. Preheat oven to 425°F.
2. Wash and halve the yellow potatoes.
3. Toss with olive oil, salt, garlic powder, and rosemary.
4. Place cut-side down on baking sheet.
5. Roast for 25–30 minutes until golden.
6. Serve hot as a side or base for mains.
Notes
No need to peel yellow potatoes—their skin is thin and full of flavor.
Use leftovers in breakfast hashes or salads.
