Instructions

  • Peel the potatoes and cut them into uniform one-inch cubes.
  • Boil potatoes in salted water for fifteen minutes until fork-tender.
  • Drain thoroughly and return to the pot to dry over low heat.
  • Mash the potatoes, adding butter and a portion of the cream until smooth and cloud-like.
  • Season the chicken pieces with salt, pepper, and dried herbs.
  • Sear chicken in a skillet with olive oil until golden brown.
  • Add minced garlic and sauté for one minute until fragrant.
  • Pour in chicken stock to deglaze the pan.
  • Stir in remaining heavy cream and simmer for five minutes until the sauce thickens.
